The Details

Old-vine biodynamically cultivated Pinot Noir, Pinot Gris, Auxerrois, Riesling, and younger-vine Gewürztraminer. Grapes are hand-harvested, 2/3s are pneumatically pressed without crushing. 1/3 is crushed and macerates for 6 months in spanish tinaja (amphora). Spontaneous fermentation and aging in their respective vessels before blending and a rest for a couple months. Bottled unfined, unfiltered, no additonal SO2.
