The Details

100% Dolcetto from biodynamically farmed vines in the San Antonio de Las Minas vineyard in Ensenada in the southern corridor of the Guadalupe Valley of Mexico's Baja Peninsula. Grapes are hand-harvested from 85 year-old vines and spontaneously ferment whole-cluster for 25 days prior to pressing and early bottling under crown-cap a la ancestral method (pét-nat). Unfined, unfiltered, no additional SO2.
