The Details

From organically cultivated, dry-farmed bush-vines in Ensenada, this is 50% Dolcetto, 40% Lambrusco, 10% Tokai from San Antonio de Las Minas (vineyard name). Grapes are hand-harvested, a portion of them are directly pressed while the remaining grapes are added whole-cluster to steep/infuse/macerate in the fermenting juice. After 5 days, the wine is pressed to tank for 10 month élevage. Bottled unfined, unfiltered, no additional SO2.
