The Details
From the legendary Clos de Tue-Boeuf in the Loire Valley's Cheverny subregion, this is 100% Pinot Noir from 50ish year-old vines that spontaneously ferment whole-cluster, semi-carbonically (layer cake method) in old barrel. Eight months of élevage in a combination of barrel and 400L demi-muid is followed by being bottled unfined, unfiltered, no additional SO2. 12.36% ABV
