The Details
A special, coveted vineyard only worked by a couple growers in the Jura. 100% Chardonnay from old-vines heavy in gravel and clay/limestone. Grapes are hand-harvested, and whole-bunch pressed in a pneumatic press. Spontaneous fermentation in tank prior to transfer to neutral barrel for élevage for 24 months with toppoing up every 10-days. Bottled unfined, unfiltered, no additional SO2.
