The Details

100% biodynamically cultivated Savagnin from gray marl soils. Vin Jaune's little brother. Hand-harvested, pneumatically directly pressed for gentle extraction of whole-clusters. Spontaneous fermentation in stainless steel tank prior to racking to neutral barrel where the wine ages for 3-5 years without topping up. Bottled unfined, unfiltered, no additional SO2. 14%ABV
