The Details

100% biodynamically cultivated Trousseau from graavelly soils above shallow early Jurassic gray marl. From "Les Corvées" a famous lieu-dit for Trousseau (the owners of holdings here include Ganevat & Ratte, among others). 100% hand-destemmed, very light crushing, maceration from 10-30 days depending on vintage. Neutral barrel for spontaneous fermentation and élevage. Bottled unfined, unfiltered, no additional SO2.
