The Details
Grolleau, Chenin Blanc, Cabernet Sauvignon and Gamay from organically cultivated vines aged 10 to 50 years old and grown on Schist. The red fruit sees a short co-maceration and the Chenin Blanc is direct pressed. The juices spontaneously ferment and age in stainless steel tanks separately for 6 months before blending and bottling unfined, unfiltered, no additional SO2. 11% ABV
