The Details

Biodnyamically cultivated Groslot/Chenin Blanc/Gamay/Cabernet Sauvignon from the Côteaux du Layon. Grapes are hand-harvested and layered by variety all in whole-bunches in tank for spontaneous fermentation prior to pressing. Aging in tank as well for 6 months before bottling unfined, unfiltered, no additional SO2. 11% ABV
