The Details
Organically cultivated Chardonnay, Chenin, and Sauvignon Blanc (45% Chardo + 40% Chenin + 15% Sauvignon Blanc) from 35 year-old vines in Rablay-sur-Layon on schistous soils. Grapes are hand-harvested, a portion of the Chenin is directly pressed; the rest along with the Chardonnay & Sauvignon Blanc macerate/infuse whole-cluster for 1 month in the directly pressed Chenin Blanc juice. All in epoxy tank, the wine ages for 6 months before bottling unfined, unfiltered, minimal added SO2.
. All are kept whole-cluster except for part of the Chenin that gets direct-pressed. Everything goes into an epoxy tank, including the direct-pressed juice, to ferment and macerate for one month (malolactic occurring) without pump-overs or punch-downs. The wine is then pressed for free-run juice and just the start of the pressed-off juice. Lightly filtered (only the last 10 percent of the tank to remove lees sediment).
Wine is aged 6 months in epoxy tanks, with a small amount of sulfur added at bottling.
