The Details

Two very old parcels - La Habanera & San Antonio - of Listán Negro from vines cultivated according to cordon trenzado, both volcanic-sandy soils (the latter with more clay). Grapes are hand-harvested, foot-trodden and partially destemmed. Spontaneous fermentation and aging for 11 months in 228 & 600 L neutral barrels. Bottled unfined, unfiltered, minimal added SO2.
