The Details

100% biodynamically farmed Fiano from Puglia, the grapes are destemmed and softly crushed. Spontaneous fermentation takes place in stainless steel tank where the juice macerates with the skins for 6-7 days prior to pressing. 5-6 month maturation in tank prior to being bottled unfined, unfiltered, minimal SO2 at bottling.
