The Details
"Étorneaux" or "Starlings" refers to the birds that ate the entire harvest in 2001! An infusion/flotation method wine composed of Gamay de Chaudenay (a teinturier aka red-fleshed grape) that macerates/infuses whole-cluster in the directly pressed juice of Gamay Jus Blanc (the more common Gamay). All in neutral barrel, the wine rests for 20 months before being bottled unfined, unfiltered, no additional SO2.
