The Details

From a parcel that was replanted about 15 years ago, this is a field blend of 30+ ancient varieties of the Loire, many of which are unknown. Grapes are hand-harvested, destemmed, and macerate for several weeks before pressing. Spontaneous fermentation and aging in neutral barrel for 30 months before being bottled unfined, unfiltered, no additional SO2. 12.5% ABV
