The Details

From younger biodynamically cultivated vines in Sologne, this is a field blend of 12+ different varieties, many up the family tree of Loire varieties and some unknown grapes as well. Hand-harvested, destemmed, gently pressed and 20 months in neutral barrel for spontaneous fermentation and aging. Bottled unfined, unfiltered, no additional SO2.
