Back-Vintage Umbrian Red!! 100% Sangiovese from biodynamically cultivated 16 year-old vines in Torgiano above an ancient Etruscan farming site in Umbria. Grapes are hand-harvested, foot-trodden, pressed to concrete tank. Spontaneous fermentation maceration for 20-60 days before pressing to neutral oak for 12 month élevage. Racked to concrete tank for a further 12 months resting before being bottled during the falling moon unfined, unfiltered, minimal (<25ppm) added SO2. 15% ABV
