The Details

This wine undergoes a process of destemming, foot treading, and maceration for 18-20 days. It is then aged for six months in concrete before being transferred to tonneaux for 1 year, where it rests on the lees. After that, the wine is racked once again to concrete and fiberglass and left to rest for an additional year. It is bottled without any fining or filtering. The winemakers exclusively use the natural yeasts found on the grape skins, employing the "pie de cuve" method to prevent uncontrolled fermentation. Once the grape juice has transformed into wine, it is decanted on fruit days according to the lunar calendar and spends the entire winter on its fine lees. These lees are stirred weekly through batonnage to enhance the wine's stability and richness.
