The Details
A light and fresh take on Valpolicella - from organically farmed vines within Valpolicella in the Veneto, this is 60% Corvina, 30% Rondinella, 10% Molinara. Grapes are hand-harvested and co-ferment/macerate for several weeks before pressing. Spontaneous fermentation and aging for another 9 months all in stainless steel. Bottled unfined, unfiltered, minimal (<20ppm) added SO2.
