The Details

90% Grecanico, 10% Carricante biodynamically culitvated on the north and northeast face of Mt. Etna in the Nave and Tartaraci contrade. Grapes are hand-harvested and Grecoanico macerates 4 days prior to pressing where it thereafter spontaneously ferments in glass demijohns. Eventually the juice is blended with directly pressed Carricante that spontaneously ferments and ages in chestnut barrel. Bottled unfined, unfiltered, minimal (<20ppm) added SO2. 13% ABV
