The Details
90% Nerello Mascalese, 10% Grecanico. Nerello spontaneously ferments 50/50 whole-cluster/destemmed prior to ressing to 20hl neutral oak for the completion of fermentation. Grecanico macerates for 5 days prior to pressing and being added to the Nerello. Racked to stainless steel tank for a short élevage before being bottled unfined, unfiltered, minimal (<20ppm) added SO2.
