The Details
100% Menu Pineau from Touraine, the grapes are hand-harvested and partially directly-pressed on arrival at the winery while portions of what end up in the wine macerate for 2-3. Spontaneous fermentation and élevage sur lie take place in used Burgundy barrel for 6+ months with regular bâttonage. Bottled unfined, unfiltered, minimal-none added SO2 depending on the vintage.
