The Details

Sauvignon Blanc + Menu Pineau from biodynamically cultivated 15 year-old vines. Grapes are hand-harvested, destemmed, and gently pressed to neutral barrel. Spontaneous fermentation and 20 months' élevage all in neutral barrel. Bottled unfined, unfiltered, no additional SO2.
