The Details

Biodynamically cultivated Jacquère, Altesse, Gringet, Savagnin, Molette, and Mondeuse Blanche. Grapes are hand-harvested, some macerate for 3 days, others are directly pressed. Spontaneous fermentation and aging sur lie all in neutral foudre before bottling unfined, unfiltered, no additional SO2.
