The Details
100% Schiava from 54 year-old vines planted to clay/sand soils of volcanic and morainic origin. Grapes are hand-harvested 50% is left whole-cluster, 50% destemmed and spontaneously ferment in tronconic vat for 4 weeks prior to pressing. Matured for 12 months in wooden vat. Transferred to concrete vat for a further 10 month élevage. Bottled unfined, unfiltered, minimal (10ppm) added SO2. 12% ABV
