A blend of Pinot Noir, Verdelho, Sauvignon Blanc, Semillon and Roussanne. The Pinot Noir is direct-pressed and fermented separately with wild yeasts. The Verdelho, Sauvignon Blanc, Semillon, and Roussanne are also fermented separately and macerated with the skins for 14 days, with daily manual punchdowns. Disgorged and bottled without SO2.
